Anyone who knows me knows that the best way to learn about me is through my food! All of my restaurants—and cookbooks—feature my brand of Nuevo Latino: one that combines my Colombian heritage with my French—and New York City—restaurant education, along with the knowledge I’ve harvested through years of being a chef, restaurateur, host—and father. Though my multiple kitchens and books may be slightly different, my culinary philosophy remains consistent even when I’m in my own house.
