Anyone who knows me knows that the best way to learn about me is through my food! All of my restaurants - and cookbooks - feature my brand of Nuevo Latino: one that combines my Colombian heritage with my French - and New York City - restaurant education, along with the knowledge I’ve harvested through years of being a chef, restaurateur, host - and father. Though my multiple kitchens and books may be slightly different, my culinary philosophy remains consistent even when I’m in my own house. Food should be delicious to behold, fun to create, and fabulous to consume!
